Traditional Recipe to cook Tarta de Santiago (Santiago's cake)

Ingredients
250 g of ground almonds
250 g of sugar
4 eggs
lemon zest
cinnamon
butter
icing sugar.
Process
Beat the eggs with the sugar until they are sparkling.
Add the almonds, the lemon zest and the cinnamon and mix well.
Gate a mold with butter and pour the dough.
Smoke the surface and bake at 180ºC for about 25 minutes or until it is set.
Let cool and unmold.
Sprinkle with icing sugar and decorate with a Santiago cross cut on paper.
Approximate time: 45 minutes.
