Traditional Recipe to cook Scorpionfish cake

Ingredients

  • 800 g of scorpion fish

  • 3 eggs

  • 3 crab sticks or surimi

  • 30 g of homemade fried tomato

  • 1 piquillo pepper

  • 100 ml of liquid cream for whipping

  • 10 g of butter

  • 1 onion

  • 1 leek

  • 1 carrot

  • 1 bay leaf

  • 15 ml of extra virgin olive oil

  • salt

  • black pepper

Process

We prepare a broth by boiling water with salt, onion, leek, carrot, a tablespoon of oil, and bay leaf for ten minutes.

We cook the fish in the broth for another fifteen minutes.

We remove them and clean them of skin and bones, carefully flaking them into another container.

In another container, we mix beaten eggs, chopped crab sticks or surimi, fried tomato, piquillo pepper, cream, butter, chopped onion and leek, grated carrot, bay leaf, olive oil, salt, and black pepper.

We add the flaked fish to the mixture and pour everything into a greased mold.

We bake at 180°C for 30-40 minutes until set.

Let it cool before serving.
