Traditional Recipe to cook Cod in Pil-Pil sauce

Ingredients

  • 4 desalted cod loins

  • 200 ml of extra virgin olive oil

  • 4 cloves of garlic

  • Red chili (optional)

  • Salt

Process

In a saucepan, heat the olive oil over medium heat.

Add the sliced garlic and the chili (if you want a spicy touch).

Sauté until golden.

Add the cod loins and cook over low heat, moving the saucepan in circles to emulsify the oil with the fish juices.

Serve hot with boiled potatoes or bread.
