Traditional Recipe to cook Cocido gallego (Cooked Gallego)

Ingredients

  • 500 g of chickpeas

  • 500 g of veal meat

  • 500 g of lacon

  • 250 g of bacon

  • 4 sausages

  • 4 black pudding

  • 1 cabbage

  • 4 potatoes

  • salt

  • water

Process

Put the chickpeas soak the night before.

In a large pot, put the flesh, the lacon, the bacon, the sausages and the black pudding.

Cover with water and salt.

Cook over low heat for about 2 hours.

Add the chickpeas and continue cooking until they are tender.

Apart, cook cabbage and potatoes in salt water.

Drain and reserve.

Serve the cooked in a fountain with the broth separately.

Approximate time: 3 hours.
